Kısır
Kısır is the Turkish version of tabouli. Here is a recipe that I have used and enjoyed from a writer who has given me Turkish food advice by email (I wrote her after seeing her on TV; Ayşe had her address from a vegetarian email list):
Ingredients
- 1 cup köftelik bulgur
- 1 cup boiling water
- salt
- juice of 2 lemons
- 2 tomatoes, chopped to “bird's head” (kuşbaşı) size
- 1/2 cup (total) chopped parsley, mint, and dill
- 1/2 cup chopped onion and garlic
- black pepper, cumin, sumac, red pepper
- nar ekşisi (pomegranate syrup)
Preparation
Pour the boiling water over the bulgur and cover. Wait 15 minutes till the water is absorbed. Add salt, spices, and the other liquids, then the vegetables.
